Easy Cheesy Mexican Chicken

The name says it all! This is a delicious Mexican dinner that is sure to please!



Ingredients:

6 small boneless skinless chicken breast halves (about 1-1/2 lb.), pounded to 1/4-inch-thickness
1 can (10-3/4 oz.) condensed cream of chicken soup
1-1/2 cups KRAFT Shredded Mild Cheddar Cheese, divided
1/2 cup milk
1 pkg. (1-1/4 oz.) TACO BELL® HOME ORIGINALS® Taco Seasoning Mix
2 cups corn chips
4-1/2 cups cooked rice

Directions:
PREHEAT oven to 375°F. Place chicken in 13x9-inch baking dish.

MIX soup, 1 cup of the cheese, milk and seasoning mix until well blended; spoon over chicken. Top with chips; cover.

BAKE 30 minutes. Sprinkle with remaining 1/2 cup cheese. Bake, uncovered, an additional 10 minutes or until cheese is melted. Serve with rice.

Crockpot Cranberry Pork Chops

I'm not a huge fan of pork chops but these were GREAT! They are delicious served with a side of mashed potatoes.

Ingredients:

6 chops
1 can jellied cranberry sauce
½ can cranberry juice
¼ cup sugar
2 T. brown mustard


Directions:

Combine ingredients and pour over chops.
Cook on low, 5-7 hours in a crockpot

Remove the chops.
Put in saucepan 2 T cornstarch and ½ cup cold water until smooth. Gradually add cooking juices. Cook and stir for 2 minutes, until thickened.


Kit Kat Bars

This dessert is definitely a crowd pleaser! 

Ingredients:

* 60-80 buttery rectangular crackers

* 1 1/2 cups graham cracker crumbs
* 3/4 cup packed brown sugar
* 1 cup white sugar
* 3/4 cup butter
* 1/3 cup milk
* 1 cup milk chocolate chips
* 1 cup semisweet chocolate chips
* 3/4 cup peanut butter

Directions:

1. Put graham cracker crumbs, brown sugar, white sugar, butter and milk into a saucepan and bring it to a boil. Boil for 5 minutes.

2. Spray pan with oil spray. Put a layer of whole crackers in a 9x13 inch pan and pour 1/2 of the graham cracker crumb mixture over it. Put another layer of crackers and pour the remaining mixture. Add last row of crackers. Note: Press down after each cracker layer.

3. To Make Topping: Melt over low heat the milk chocolate chips, chocolate chips, and peanut butter. Melt at low heat and spread over the top.

4. Cut into thin strips or bars for serving.



Cream Cheese Crockpot Chicken

This is a super easy recipe.  It has great flavor and tastes amazing served over rice.


Ingredients:

3 - 4 boneless skinless chicken breasts

1 packet of dry  Italian Seasoning

1 (8oz) package of cream cheese, cubed

8oz sour cream

1 can cream of chicken soup


Directions:

Place chicken breasts in crockpot and sprinkle with italian seasoning. Cook on low for 4 - 6 hours. If chicken is frozen cook for 6 to 8 hours on low.

Add cream cheese, sour cream and chicken soup and cook for the final hour.


Serve over rice!

Muffin Tin Biscuit Cups

This is a super kid friendly meal. I put the whole thing together in about 15 minutes and it only takes about 11 minutes to cook so it's great for a weeknight, too! The turkey ground is a little sweet from the brown sugar, but the buttery biscuit and cheese make them savory.



Ingredients:
1lb ground turkey

1/4 cup ketchup
2 TBSP mustard
1 TBSP minced garlic
1/2 med onion, diced
2 tbsp of brown sugar
1 container of biscuits (Grands flaky work great)
shredded cheddar cheese


Directions:
Cook meat in skillet with diced onion until browned. Add ketchup, mustard, garlic and brown sugar.

Meanwhile, preheat oven to 350 degrees. Press biscuits in well greased muffin tins. I use a large muffin pan.
Fill biscuit "cups" with meat mixture. Top with cheese and bake for 11 to 13 minutes!

Makes 6 to 8

Greek Rice

I got this from a friend who got it from a friend. It's super delicious!

Ingredients:

1/2 tsp olive oil

3 garlic cloves, sliced

1 med onion, chopped

3 C vegetable or chicken stock

1 lemon, juiced & grated zest

1 C brown rice

2 T crumbled feta cheese

1 green onion, diced

salt

Directions:

Saute oil, garlic and onion. Add rice, cook and stir for 2 minutes.

Add stock, cook until rice is done.

Season with salt, simmer 20 - 30 minutes over low heat. Set aside covered, steam 5 -6 min.

Add feta and green onion, stir. 


Chicken/Tuna Casserole

Another meal that is great during colder weather. It really sticks to your ribs and warms you thru and thru! 

Ingredients:

1 package egg noodles, prepared as directed

5 T butter & flour (to make a rue)

2 1/2 C of milk

1 package of cream cheese, cut into cubes

2 sm cans of tuna or 1 large can of chicken

8 thicker slices of muenster cheese

1 cup of bread crumbs

Directions:

Prepare egg noodles and set aside for later. 

Start out by making a rue of 5 Tbsp of butter and flour. Cook it down whilst whisking for about 2 minutes (it helps cook out the flour taste)

Then add 2.5 cups of milk slowly whilst whisking. When a nice creamy sauce has formed, add in your cream cheese .

Lastly add in 2 small cans of tuna (or one large OR a can o' chicken).

In a large casserole dish layer ingredients:  sauce/noodle/muenster cheese/sauce/noodle/muenster cheese/sauce/breadcrumbs

Bake on 350 until bubbly
