Parmesan Garlic Edamame


Made this last night while entertaining and it was gone QUICK.   Cost a total of $2.99 because I had most of the ingredients on hand, except the steamable edamame (yes, steamable - so easy).   Everyone loved it and asked for the recipe. 

Ingredients:
1 bag of steamable edamame
1 1/2 TBS EVOO
1 teaspoon minced garlic
1 teaspoon red hot pepper flakes (can use more if you like a lot of spice)
1/2 cup grated parmesan cheese (can use more or less if you want)

1.  Steam the edamame according to the bag directions.
2.  Heat the oil in a pan over medium heat.
3.  Add in the garlic and red hot pepper flakes.  Let the garlic simmer for about 2 minutes, stirring occasionally. 
4.  Add the edamame to the pan and stir well to coat.   Let it simmer for about 3 minutes, stirring occasionally. 
5.  Remove from heat and pour into a strainer to get off any excess oil.  Let sit for 2-4 minutes.
6.  Add the grated parmesan cheese to a medium bowl.  Add the edamame in and toss to coat.  Enjoy!

Jalapeno Corn Dip

I can't even begin to tell you how fast this dip disappeared.   This recipe has been floating around Pinterest for awhile but I know other people who made it and had a few problems with it so after trial and error, we found the perfect recipe!  It has the right amount of spice and cheesy goodness that we all love in a dip.  We served ours with blue corn chips but basically any chip or bread would work. 


Ingredients:
1 (14oz) can sweet corn
2 jalapenos, seeded and diced
1/2 cup LIGHT sour cream
1/2 cup mayo ( we used light mayo)
1 cup shredded Monterey Jack Cheese, divided
1 cup shredded Sharp Cheese. divided
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon chili powder (I went very light on this - more like 1/8 teaspoon so make it to your own liking if you enjoy spice!)
1/8 teaspoon hot sauce
salt & pepper to taste

optional:  2 green onions finely chopped (we omitted but the original recipe calls for them)


1.  Drain the corn at least one hour before assembling the dip.   You want to get rid of all the excess moisture so your dip doesn't get runny.  I actually had mine sit in a strainer for about 90 minutes while I was busy doing other kitchen things.  

2.  Preheat oven to 375. 

3.  In medium size bowl, mix together the sour cream, mayo, hot sauce and spices.   Fold in the corn & diced jalapeno.   Add 3/4 cup of each cheese and mix well. 

4.  Place the dip in a greased baking dish and top with the remaining cheese. 

5.  Bake 20 minutes or until the cheese gets bubbly.   Let it sit for about 5 minutes before serving.

Baked Meaty Pasta with Cheese

Had a last minute guest coming to dinner so I had to scratch the planned dish and make something that I had more of.  This makes A LOT so be prepared to freeze some or invite extra people to dinner.  This is super easy to make and always a hit.  Also,  I love that I can make it a head of time and just pop it in the oven when we are ready to eat. Serve it with italian bread and dinner is done! 

Ingredients:
1 box of pasta (I usually use rotini or elbow macaroni)
1 jar of your favorite spaghetti sauce (I use Ragu meat flavored)
1 lb lean ground turkey (or beef)
1/4 finely chopped yellow onion
2 TBS Italian Seasoning
1/8 teaspoon black pepper
3 cups part skim mozzarella cheese

1.  Cook the pasta according to box instructions.  Drain well. 
2.  While the pasta is cooking, brown the meat in a large non stick skillet.   Add the 2 TBS italian seasoning, black pepper and chopped onion to the meat and stir well.   Once cooked, drain the grease and set aside.
3.  Heat the spaghetti sauce in a pot until warm. Season to taste if necessary. 
4.  Heat oven to 400.  
5.  Spray a large casserole dish with cooking spray. 
6.  Add the well drained pasta to the dish.  Then add some of the spaghetti sauce and stir well, until the pasta is covered (just use enough to coat the pasta, keep the extra sauce on the side.)
7.  Add the meat and onion.  Stir into the pasta until it is spread throughout.
8.  Top the meat and pasta with the cheese.
9.  Put in middle shelf of oven until the cheese is melted.  Serve with bread and the extra sauce for dipping.

Ham Sandwiches

My friend Dawn made these for a party and I HAD to get the recipe. They are some of the best ham sandwiches I've ever had!


Ingredients:
2 packages of martins potato slider rolls (i think there is 12 in a pack)

2 sticks of butter

2 tablespoons of Worchestershire

2 tablespoon prepared mustard

4 tablespoons of brown sugar

2 tablespoons of sesame seeds

1 3/4 lbs of deli ham

1 lb of swiss cheese

Instructions:
Prepare mini sandwiches with 11/2 to 2 pieces of ham and 1 slice of swiss

Place on cookie sheet.

In a medium sauce pan, melt butter. Add worchestershire, mustard, brown sugar, and sesame seeds. Bring to a boil and remove from heat. Pour over rolls and set aside for two hours.

Then bake at 350 degrees until cheese melts.
